NEW ARRIVALS & COMMUNITY HAPPENINGS

New Arrivals at The Cheese Shop on Park

Bijou - Vermont Butter & Cheese Company - $5.50 / Each - French-style crottin this fresh ripenedchevre chaud” cheese is very smooth and creamy with notes of flowers, hazelnuts and yeast and a fresh distinct goat’s milk flavour. Incidentally - "chevre chaud" literally translates as hot goat cheese. Chevre Chaud is a traditional French dish, consisting of goat cheese (or chevre) served hot. It is usually made by broiling the cheese on open face french bread, and is often served with a green salad. - très bon!

Coach Farm Stick Aged Goat Cheese - New York - $14.00 / Each - Made with vegetarian rennet this aged goat cheese is stronger in flavour than fresh chevre with a firm paste and a delightful, edible bloomy rind.

Speaking of Coach Farm - The FRESH BUTTONS are back in stock - $4.50 / Each but hurry - these little yummies don't stay in stock long!

Morbier, Raw Milk - France - $20.50 / LB - We finally got our little Cheese Monger hands on a wheel of raw milk Morbier. Like it's pasteurized counterpart - only better - this is an aromatic, mild French cow's milk cheese defined by the dark vein of vegetable ash through the middle. The wheel is washed by hand, forming a rind to protect the rich, creamy interior and create a delectably pungent aroma.

New NOT Cheese

Prosciutto di Parma - Parma, Italy - $12.50 / Each - YES!! One of the earliest references to ham production in Parma appeared about 100 B.C. in the writings of Cato. Prosciutto di Parma typically has a rich, sweet-salty fragrance and flavour. Pigs used to make this famed delicacy are fed the whey from Parmigiano Reggiano. This one is sliced soooo thin - 8 slices to a pack or about 1/4lb (OK don't do the per-pound math, but trust us it IS worth every penny!!)

Hot Sopressata Salami - St. Louis - $8.50 / Each - From Volpi Italian Meats. This recipe originated in the Veneto region of Italy and was brought to St. Louis by John Volpi in 1902. Slowly air dried, this spicy salami is great with robust red wine, mild cheeses (try it with Taleggio) and a wide variety of crackers and breads. It is delizioso!
